Less sugar caloriesMarch 07, 2013 By Lessahope
I used 12 packets of truvia sweetener instead of regular sugar. Still used the brown and added onion and garlic powder. Could've gotten away with less sugar, but I like it sweet. Great sauce, even without the adds.

Very good recipeFebruary 07, 2013 By jrstout55
This was a very good bbq sauce recipe. I made it with honey mustard instead of regular yellow mustard. The sweet and the spicy went great together..

This is the only sauce i make and have never had complaint one.Its great for basting ribs or just adding to pulled pork,if your not a big fan of a little spice in your sauce you can cut the cayanne in half. This is a 5 star recipe,a must try..

Immediate edition to recipe canonDecember 14, 2012 By DynamiteCP
Best sauce I've ever made or tasted hands-down. The first 30 minutes of simmering I was a bit worried, but then it comes together. Friends have requested it for Christmas, I'm going to bottle it.

Best south Carolina BBQDecember 10, 2012 By littlemom25
This is a party in your mouth! We grilled 10 racks of baby back ribs and served them with this sauce. Everyone loved it. It is the perfect combination of buttery salty spicy sweet. A very authentic Southern Carolina sauce.

Great Sauce, but NOT North Carolina StyleOctober 26, 2012 By apl80
I just have to say, this sauce is great. We love it around here, and I make it several times a year. But, we're North Carolina natives and this is NOT by any means, in any way, North Carolina sauce. In NC, the western half of the state has perfected tomato based sauce, while the eastern half has claimed fame to vinegar based. This is a South Carolina style sauce. Don't believe me? Head to Bessinger's in Charleston where it's famous.

Big Daddy's Carolina SauceAugust 25, 2012 By Katbrown2057
I feed large amounts of people a couple of times year. At one luncheon I make pulled pork and this is my third year of using Big Daddy's Carolina Sauce. I love mustard and vinegar, so this sauce is perfect for me. I warn people that it is spicy and full of vinegar. I have to make it because there are a few people who appreciate North Carolina style pulled pork. Unfortunately, here in Southern California, most people want their pork smothered in a sweet, ketchup based BBQ. I refuse to smother my pulled pork in ketchup!. I provide my BBQ sauces on the side. I serve my pulled pork with a very spicy vinegar based coleslaw. It is the best!

The best barbecue sauce in the world!August 24, 2012 By penand1nk
This sauce is so simple to make and it seriously tastes better than any bbq sauce I've ever tasted. I've made it dozens of times and every single time, I get compliments about it from every person that tastes it. I almost always make a double batch, because it gets used up so quickly! Highly recommended.

It's way way way too hot and doesn't have a takst at all... Stinks from all the vinegar and too much mustard as well.. Wouldn't make this ever again...

Great sauce as isJuly 08, 2012 By bschaller1953
I made a half batch of this sauce to accompany my pulled pork. I've not cared for any other vinegar or mustard-based sauces I've tried -- but wanted to stay ""authentic"" for a true Carolina experience, so I tried this one. I prepared it as written, and it is great (I never alter a recipe until I've tried it as is). I really like the sweet, spicy and tangy all in the same sauce. I don't think I will change a thing and I have already made another batch. Thanks, Big Daddy, for this great recipe - it's a keeper. (Oh, sorry, I lied - I did cut the liquid smoke in half, as I like a milder smoke flavor. My bad.)

OK, I guessJune 09, 2012 By CollinLeon
Being from Texas, I'm not particularly a fan of these sauces that are based on mustard. BBQ is a religion here in Texas and to use a mustard based sauce on it is just sacrilegious. I tried the original recipe and found it a bit too overpowering with the mustard, so I added a bit more brown sugar, some Worcestershire sauce, garlic powder, chopped yellow onions, crushed red peppers, ketchup, and habanero sauce. Eventually, I got something that was close to the color of a Texas BBQ sauce, palatable, but definitely different than any true Texas sauce. Oh well, it will be good for a change, but I can't let anyone know I've done it, otherwise I will be deported from Texas to some Yankee infested place like Georgia.

excellent and unusual sauceOctober 15, 2011 By majkfngrs
This was a wonderful find on this site. I have done as many as 6 pork butts at a time on my Traegar and our barbecues usually have between 25-40 people, + kids. After I made it the first time I started tinkering with the spices. Cut the white sugar and chili powder in half, added a cup of honey, and substituted 1 tsp. of chipolte powder for the cayenne. A sweet taste when you put it in your mouth and a slight bite as you finish the morsel. Wonderful!

Carolina BBQ SaucesSeptember 07, 2011 By bestbackyardchef
This recipe is great, I like the hickory liquid smoke-it seems to add the right complement to the sauce, and I didn't have to go looking for some exotic ingredient!

Very good sauce for baby backsSeptember 04, 2011 By LuvTxBBQ
Great tasting sauce, love the taste, but you have to simmer for over an hour to get it to the right consistency. Fun to make, and watch as it turns from liquidy/light brown to thick/dark brown. Smells good too as it is simmering.

Too sweet IMO.June 16, 2011 By tjenkins83
As published, I found this sauce to be WAY too sweet! I am going to try cutting the sugar in half next time I attempt it and will update with results. I would recommend to people that don't like overly sweet sauce to taste the sauce as you add the sugar incrementally.

FantasticNovember 08, 2010 By lovefiero
I use to buy my bbq sauce in NC at Charlie C's grocery stores, but I have since moved. I love the flavor of the vinegar based sauces so I thought I would give this one a try. I did not have the liquid smoke, so I completely omitted that ingredient, and I did add some ketchup at the end of the cooking process to cut the mustard flavor a little bit. My family loved it and said it was the best bbq sauce they ever had! I will say it is a bit spicy, but that is A-OK with us!

A whole 'nuther experience for TexansOctober 29, 2010 By ScooterTX
In West Texas, red BBQ sauces rule. So when I made Big Daddy's sauce and served it with pulled pork, several of my guests were skeptical. But those who were brave enough to try something new were richly rewarded. My mom now prefers Big Daddy's to our traditional favorites. A definite keeper!

I made it without the smoke (hickory flavouring) and it was marvelous. Everyone enjoyed it. I also did not have cider vinegar so I substituted red wine vinegar. Excellent recipe!

Big Daddy's Carolina BBQ SauceSeptember 06, 2010 By anneson
I like the sweet and tangy flavor. Next time I would pass on the Liquid Smoke or cut down. It overwhelmed the sauce for me and my family. You have to be sure you like the flavor and smell of the liquid smoke. Reminds me too much of Carl Juniors.

Keeper!August 30, 2010 By drush54
This is by far one of the best sauces I've tried! The true test is when it passes ""the kid test"". My entire family enjoys this sauce as well as my co-workers. I've used it as a mopping sauce and a table sauce. I have applied it to chicken, ribs, and boston butt, all of which turned out great. The next test will be the neighborhood cookout to see if it will be a winner!

And I Don't like Mustard!July 13, 2010 By Kathie615
I am not a big fan of mustard and rarely use it, but after reading all the reviews of Big Daddy's BBQ Sauce, my husband and I decided to give it a try (using a little less mustard and a little extra cider vinegar). We basted a chicken on the grill with it and it was wonderful! Tangy and sweet and spicy and just plain good! A few days later, we used it again on ribs. No more store-bought sauces for us. From now on it's Big Daddy's BBQ Sauce!

With the recent purchase of a smoker I have been experimenting with sauces and this one has been a huge hit. I added a bit of smoked paprika and don't use the water. I am having trouble keeping it on hand it is being used up so fast.

very nice sauceJuly 07, 2010 By BBQfanatic
I really enjoyed the taste of this sauce. Still, in the UK a new sauce just came out which crosses curry with smokey barbecue called curry barbecue or CBQ for short. Try that for a stronger, more spicy and exotic flavour.

UH-mazingJune 18, 2010 By mandyb33
This was the best bbq sauce I've ever tried!! I don't really like bbq sauce that much and this makes me want to lick it off my arm it tastes so darn good! Great complexity of flavors. Not too spicy, not too sweet. Perfect. I did dice up a small shallot and saute that before adding the other ingredients and also added some apple butter like another reviewer suggested. Other than that I followed it exactly.

Made this for a freind who was cooking a pig for a wedding reception. He wanted something that really stood out. Well this did it! Suggest using it for a dipping sauce verse poouring it all over the food. However, he told me most of the guest had pig with there sauce verse sauce with the pig. Double or triple this recipe!!!

Awesome Recipe!!June 12, 2010 By sagecs
I made a double batch as others suggested and I'm so glad I did! Simple yet excellent recipe. I did not double the cayenne and chili pepper as I'm not much for heat, but it still had a nice kick to it. I cooked the pork in a crock pot, added a touch of the hickory smoke to it & it came out fantastic.

Great sauceApril 23, 2010 By morreythomas
I enjoyed this as a dipping sauce. I rubbed pork butts with Emeril's (original) dry rub, then smoked the pork on a Weber smoker. Since the hickory chunks I used gave the pork a natural smoked flavor, I opted to omit the liquid smoke from the recipe. Try this sauce as a dipping sauce and you'll love it! Tasty on chicken and pork. Good southern eats!

Love the StuffMarch 23, 2010 By Grumpers
First time we made it, we made a half batch. Today, the 7th time we made it we doubled it. We take a 5lb sirloin pork roast and cook it overnight in the slow cooker with a can of chicken broth. In the morning we pull the pork and add the sauce. This is very good stuff

What depth of flavorJanuary 12, 2010 By RCOP4919
What a great recipe. Made for Christmas day. It really didn't take long to cook the ingredients. The only thing I did different is vodka instead of water, it really helped bring out the spices. Make sure you have time to let it sit in the fridge overnight. That's where the real magic occurs. It helps thicken the ingredients and allows the spices to blend. It will also lessen the vinegar and mustard tones. Finally, when tasting, there are about 3 to 4 levels of flavors. WOW!!!! It is spicy but not really hot. There is a pepper taste but not over bearing. Tangy but yet sweet. Excellent on everything! Pork, Chicken, Beef, add to a rice dish. It makes everything taste new and exciting. Make sure you double your recipe because this is truly addictive. Nothing store bought begins to compare, for taste.

Double the RecipeSeptember 30, 2009 By Cirquerider
Double the recipe because its going to go fast! I substituted Sierra Nevada Pale Ale for the water, and did not add liquid smoke since the pulled pork was naturally smoked. The sauce adds a tangy finish to the meat with balanced flavors of spice, pepper, vinegar and sweetness without overwhelming or hiding true natural flavors of smoked meats.

Awesome SauceJuly 05, 2008 By Philwoods
This was my first time smoking a pork shoulder and I ended up smoking two. I put a rub on the meat and let it sit for two days then smoked two 9lb shoulders until the temp was 180 inside. I followed your directions from beginning to end with the rub, how long and what temp the meat should be and then I made the sauce. The meat is extremely moist, which is great and the sauce is awesome. I want to thank this site and the people who contribute to it because I have used many recipes and they have all been good. I will continue to use it and post my results. Phil (Fox River Grove, IL)
