Sautéed New Potatoes

Lainie Flores Carter sent me this potato side dish recipe. It is loaded with delicious flavors that go well with any grilled or smoked dish.

Prep Time: 20 minutes

Cook Time: 25 minutes

Ingredients:

  • 8-10 new potatoes, quartered
  • 1/4 cup chicken broth
  • 2 tablespoons olive oil
  • 2 scallions, chopped
  • 2 cloves roasted garlic
  • parsley to taste
  • southwestern (or Cajun) seasoning
  • salt and pepper

Preparation:

Mix together everything but the potatoes and chicken broth. Marinate potatoes in mixture for 20 minutes. Place in a heated frying pan with 1/4 cup chicken broth. Cover and sauté until tender (about 25 minutes on low) remove cover and allow potatoes to brown in remaining oils. Serve hot with any bbq dish you've made.
