Asparagus Tacos

Looking for a great vegetarian taco? Try stuffing grilled asparagus and cheese in a tortilla.

Prep Time: 15 minutes

Cook Time: 10 minutes

Ingredients:

  • 16 asparagus spears
  • 4 corn tortillas
  • 1/4 cup Monterey jack cheese, shredded
  • 1/4 cup cheddar cheese, shredded
  • salt and pepper to taste
  • olive oil

Preparation:

Soak asparagus in cold water for 30 minutes. Preheat grill. Place asparagus on hot grill and cook until they start to soften and have good grill marks. Remove from grill. Place 4 spears in each tortilla, sprinkle with salt and pepper and add 1/4 of the cheese. Fold in half, brush the outside with olive oil and place the whole thing back on the grill for a couple of minutes or until the outside is crispy and the cheese is melted. Add sour cream and guacamole to finish it off.
