Parmesan Eggplant

To really get the bitter flavor out of eggplant, cut into slices, lightly salt and allow to sit for several hours. Once this is done, you can drain out the bitter liquid and continue with the grilling.

Prep Time: 10 minutes

Cook Time: 15 minutes

Ingredients:

  • 1 1/2 pounds eggplant
  • 1/3 cup olive oil
  • 3 tablespoons Parmesan cheese, grated
  • 2 tablespoons vinegar
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper, freshly ground
  • 1/2 teaspoon paprika

Preparation:

Thoroughly wash eggplant and cut into thick slices. Mix together olive oil, vinegar, garlic, salt, pepper and paprika. Place eggplant slices on preheated grill and brush with mixture. Grill for about 15 minutes or until tender, turning occasionally and brush with mixture every couple of minutes. When about done, turn again and brush with mixture. Sprinkle with cheese and continue grilling until the cheese is melted. Remove and serve hot.
