Heavy on the Sausage Potatoes

These grilled potatoes are served up with diced bell peppers and sausage. This dish would make an excellent breakfast item.

Prep Time: 20 minutes

Cook Time: 20 minutes

Ingredients:

  • 1 pound small potatoes
  • 1/2 pound breakfast sausage
  • 1 red bell pepper
  • 1/4 cup olive oil
  • 1 tablespoon paprika
  • 1 tablespoon fresh parsley
  • salt and pepper

Preparation:

Cut potatoes into wedges (eighths). Cut bell pepper in half lengthwise and remove seeds. Mix olive oil, paprika and parsley together in a small bowl. Brush over potatoes and peppers. Preheat grill. Place potatoes on hot grill and let cook for about 20 minutes turning occasionally. Do not let them burn. About 5-7 minutes before the potatoes are done place sausage and bell pepper on the grill. Grill until everything is just about done. Remove everything from grill. Chop sausage and potatoes into bite size pieces. Dice bell pepper. Toss together in a skillet over a medium low heat. Add salt and pepper to taste.
