Veggie Ribbons

This is actually a great recipe because you can use these vegetable ribbons for so many things. Not only are they delicious on their own, they can be used instead of rice or pasta. For instance, if you are grilling chicken you can serve it up on a bed of veggie ribbons.

Prep Time: 15 minutes

Cook Time: 10 minutes

Ingredients:

  • 1 pound zucchini
  • 1 pound summer squash
  • 2 tablespoons olive oil
  • 3 cloves garlic
  • 1 tablespoon lemon juice
  • 1 tablespoon balsamic vinegar
  • salt and pepper

Preparation:

Cut zucchini and squash lengthwise into ribbons. A vegetable peeler works great for this. Try to get the ribbons about 1/4 to 1/8 inch thick. Place ribbons in a resealable bag with olive oil, lemon juice and garlic and toss. Preheat grill. Spray a grill wok with nonstick spray and place on grill. Remove ribbons from bag and save remaining mixture. Put the ribbons in the wok and grill for about 10 minutes turning every 2-3 minutes. Put ribbons in a large bowl and toss with vinegar, salt and pepper.
