Smoked Potato Skins

This is a great appetizer to make if you already have the smoker heated up. The low temperature and the smoke environment of the smoker adds a great flavor to these potato skins and allows the flavors to blend together while they cook.

Prep Time: 15 minutes

Cook Time: 1 hour, 00 minutes

Ingredients:

  • 8 large potatoes
  • 3/4 cup of cheddar cheese
  • 1/2 cup green onions
  • 1 tablespoon paprika
  • 1 teaspoon cayenne
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • olive oil

Preparation:

Bake potatoes until tender. Cut lengthwise in quarters. Scoop out to make shells about 1/2 thick. Paint with olive oil and coat both sides with dry ingredients. Place in prepared smoker at about 200 degrees F. (93 degrees C.) and smoke for 1 hour. Sprinkle with cheese and let smoke until cheese melts. Top with chopped green onions and serve with barbecue sauce.
