Guess again. These vegetables are grilled for flavor then tossed together to make a great meal or side dish. INGREDIENTS:
PREPARATION:Combine 2 tablespoons olive oil with garlic. Brush over bell pepper, squash, eggplant and onion pieces. Mix 4 tablespoons olive oil with salt and pepper. Add tomatoes and basil, Toss lightly. Grill pepper, squash, eggplant and onion on preheated grill. Cook for 8-12 minutes, turning frequently. Boil linguine. Remove vegetables from grill and chop coarsely. Add tomato mixture and goat cheese and toss. Mix together with linguine and sprinkle with Parmesan cheese. Suggested Reading |
