Grilled Red Pepper and Feta Cheese Dip

This flavorful dip is great for any occasion. Try it at your next cookout or Super Bowl party. If you're not fond of feta cheese, you can always use crumbled blue cheese instead.

Prep Time: 15 minutes

Cook Time: 12 minutes

Ingredients:

  • 3 red or orange bell peppers
  • 1 can garbanzo beans, drained
  • 1/3 cup olive oil
  • 1/4 cup feta or blue cheese
  • 3 cloves garlic, minced
  • 2 tablespoons fresh lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper

Preparation:

Preheat grill for high heat. Place bell peppers on lightly oiled grill grate and allow to cook for 5-7 minutes until skins turn start black. Remove from heat, place in a covered bowl, and allow to cool. Remove burnt skins from peppers as well as core and seeds. Cut into 1 inch pieces and place into food processor. Add garbanzo beans, cheese, and garlic. Process until mixture has a smooth consistency. Add spices, 1/4 cup of olive oil, and lemon juice. Pulse until mixed. Transfer dip to a bowl and top with remaining olive oil. Serve with pita bread, chips, or vegetables.
