Be sure to get a smaller sized eggplant for this recipe. INGREDIENTS:
PREPARATION:Preheat grill for medium heat. Brush slices of eggplant with olive oil. Sprinkle with salt and black pepper. Place on grill for 8 minutes. Meanwhile, in a small bowl combine cheese and basil. Turn eggplant slices, top with cheese mixture and sliced tomatoes. Allow to cook for 5 more minutes. Remove from heat and serve.
