Walnut and Fontina Stuffed Tomatoes

The secret to these stuffed tomatoes is to let them slow roast on the grill to pick up the smoky flavor that makes them great. Watch them closely so they don't burn and you will have a great side dish.

Prep Time: 12 minutes

Cook Time: 25 minutes

Ingredients:

  • 4-6 large tomatoes
  • 4 ounces fontina cheese, shredded
  • 1/2 cup walnuts, finely chopped
  • 2 tablespoons fresh basil, chopped
  • 2 teaspoons hot sauce
  • 1 clove garlic, crushed
  • 1/2 teaspoon salt
  • 1/4 teaspoon paprika
  • 1/4 teaspoon black pepper

Preparation:

Preheat grill for medium low heat. Cut tops off of tomatoes and scoop out flesh and seeds. In a medium mixing bowl, combine remaining ingredients. Scoop into tomatoes and place on grill. Allow tomatoes to cook for 20 to 25 minutes. Remove from grill and serve.
