Tarragon Turkey Tenderloins

These large turkey tenderloins are a great alternative to chicken breasts. You can also have a delicious turkey dinner without a pile of leftovers. These tenderloins work well in salads and sandwiches.

Prep Time: 2 hours, 30 minutes

Cook Time: 20 minutes

Ingredients:

  • 2 large turkey tenderloins (about 3/4 pounds each)
  • 1/3 cup olive oil
  • 1/4 cup fresh tarragon
  • 2 tablespoons red wine vinegar
  • 1 tablespoon Dijon mustard
  • 2 cloves garlic, minced
  • salt and pepper to taste

Preparation:

Combine all ingredients except the turkey and mix well. Place turkey tenderloins in a resealable plastic bag and pour in marinade. Turn to coat and refrigerate for at least 2 hours or overnight. Preheat grill. Grill turkey until the center is no longer pink, about 20 minutes over a medium fire. Carve into medallions and serve.
