Turkey Cutlets Piccata

This is a simple yet elegant meal and a great way to prepare low fat turkey breasts.

Prep Time: 10 minutes

Cook Time: 10 minutes

Ingredients:

  • 1 pound skinless, boneless turkey breast, cut into 1/4 thick slices
  • 1/4 cup lemon juice
  • 1 1/2 tablespoons capers with liquid
  • 1 tablespoon olive oil
  • 1/8 teaspoon black pepper

Preparation:

Combine juice from capers, olive oil, lemon juice and pepper in a resealable bag. Add turkey slices. Turn to coat. Refrigerate for 30 minutes to 3 hours. Preheat grill. Place turkey on hot grill. After about 2 minutes turn and baste with marinade. Continue cooking until done. Serve with capers and lemon wedges.
