Basil and Orange Turkey

This grilled turkey is sure to please. The combination of citrus and herbs makes this a tasty bird.

Prep Time: 20 minutes

Cook Time: 3 hours, 00 minutes

Ingredients:

  • 1 8-10 pound turkey
  • 3 tablespoons butter
  • 3 tablespoons fresh basil, snipped
  • 2-3 tablespoons orange zest
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3-4 cups hickory wood chips

Preparation:

Soak wood chips for about an hour before using.

Combine butter, basil, orange peel, salt, and black pepper in a small bow until thoroughly mixed; set aside.

Remove giblets from turkey. Lift turkey skin and apply butter mixture evenly underneath. Tie drumsticks together with string. Place turkey in a large roasting pan and brush all over with olive oil.

Preheat grill. Drain wood chips and place on coals. If using a gas grill, follow manufacturer's directions. Place roasting pan with bird inside on grill rack. Cook for 3 hours on medium heat, or until internal temperatures reach 185 degrees. Remove from heat, cover with foil, and let stand for 15-20 minutes.
