Grilled Spicy Whole Turkey

This is a flavorful Southwestern-style grilled turkey recipe. By butterflying this turkey you will get more even cooking and get the turkey to cook faster.

Prep Time: 15 minutes

Cook Time: 3 hours, 00 minutes

Ingredients:

  • 1 whole turkey, about 10-12 pounds
  • 1 stick butter
  • juice of 6-7 limes
  • 3 tablespoons tequila
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • Cranberry Topping:
  • 2 cups cranberries, fresh or frozen
  • 1 small onion chopped
  • 4 tablespoons orange juice
  • 4 teaspoons orange zest
  • 2 teaspoons ginger, minced
  • 1 jalapeno pepper, seeded and finely chopped
  • 1/4 teaspoon salt

Preparation:

Preheat grill for medium-high heat. Butterfly turkey. Remove excess fat, wash turkey and pat dry. In a small saucepan, melt butter oregano, garlic, lime juice, salt, and pepper. Place turkey on grill skin side down. Coat well with butter mixture. Allow bird to cook for 15-20 minutes, turn and coat with butter mixture again. Allow to cook for another 15 minutes. Reduce heat to medium low, and let bird cook for an additional 2 hours, basting with butter sauce every 15 minutes or so. Once internal temperatures reach 165 degrees F. (74 degrees C.), remove from grill. Allow turkey to rest for 15 minutes before carving.

To prepare cranberry topping: Chop cranberries and add all remaining ingredients to it in a small mixing bowl. Allow it to sit for 15-20 minutes before topping turkey with it.
