Question: Can I Stuff a Turkey I am Going to Smoke?
Answer: Smoking a turkey is best done at a temperature around 250 degrees F. (122 degrees C.). This is below the recommended cooking temperature for turkey. When you add stuffing to the bird you increase the cooking time and increase the time that the turkey and stuffing will spend at the ideal temperature for bacteria to grow. For this reason is is best that you don't stuff a turkey that you are going to smoke. You really don't want all that stuffing growing bacteria for several hours before it gets hot enough to kill it.
