By , About.com Guide

Marinate this flank steak overnight to increase its tenderness. You can adjust the sweet or sour flavor of this recipe by adding more marmalade or the red wine vinegar.

Prep Time: 30 minutes

Cook Time: 10 minutes

Ingredients:

  • 3 pounds flank steak
  • 12 ounces orange marmalade
  • 1/2 cup red wine vinegar
  • 1/2 cup ketchup
  • 2 tablespoons steak sauce
  • 2 tablespoons Dijon mustard
  • 1 tablespoon chili powder
  • 1 tablespoon Worcestershire sauce
  • salt and pepper to taste

Preparation:

Combine all ingredients except the flank steak. Mix well. Set aside 1 cup of mixture. Place flank steaks in a large resealable plastic bag. Pour marinade over. Turn to coat and refrigerate overnight. Preheat grill. Remove steaks from marinade and place on hot grill. Grill on each side for two minutes. Turn down the heat or move to a cooler part of the grill. Grill for an additional 4 to 6 minutes per side or until done. Remove from grill and let stand for 5 minutes. Meanwhile heat the remaining 1 cup of marinade. Carve flank steaks into thin slices against the grain and place on a serving platter. Pour heated sauce over top and serve.
