Mandarin Skirt Steak

The tangerines in this marinade not only tenderizes but adds a unique citrus flavor to the skirt steak. Remember that skirt steak tends to be tough to you will need a good strong marinade to keep this steak from becoming tough.

Prep Time: 15 minutes

Cook Time: 10 minutes

Ingredients:

  • 2 1-pound skirt steaks
  • juice and zest of 4 tangerines
  • 1/4 cup soy sauce
  • 2 tablespoons oil
  • 2 tablespoons ginger, peeled and grated
  • 4 cloves garlic, minced
  • 2 teaspoons Tabasco

Preparation:

Combine all ingredients except skirt steaks. Mix well. Place steaks in a resealable bag. Pour marinade over top and refrigerate for 2 hours. Remove steaks from refrigerator and preheat grill. Grill steaks over high heat for about 3 to 5 minutes depending on thickness. Turn once during grilling. Remove steaks from grill when done and let rest for 5 minutes. Carve across the grain, 1/4 inch thick and serve.
