Three Pepper Stuffed Steaks

These steaks are filled with fantastic Southwestern flavor. This is a great way to turn a less than perfect steak into a wonderful meal.

Prep Time: 20 minutes

Cook Time: 10 minutes

Ingredients:

  • 4 1-inch thick tenderloin steaks
  • 4 slices Monterey Jack cheese
  • 4 whole green chilies (fresh or canned)
  • 1 tablespoon paprika
  • 1 tablespoon white pepper
  • 1 teaspoon cayenne
  • 1 teaspoon brown sugar
  • 1 teaspoon cumin
  • olive oil

Preparation:

Preheat grill. Combine paprika, white pepper, cayenne, brown sugar and cumin together. Cut a slit into each steak, making a pocket large enough to hold the cheese and green chili. Place one slice of cheese and one chili into each steak pocket. Brush each steak lightly with olive oil. Rub spice mixture over the steaks. Place steaks on hot grill over medium heat and cook for about 8 minutes, turning once or until steaks reach desired doneness.
