Anticuchos

This is a traditional Peruvian recipe for grilled steak. You start by making a marinade that is loaded with delicious flavor. Then you thread these steak pieces onto skewers and grill them hot and fast.

Prep Time: 20 minutes

Cook Time: 10 minutes

Ingredients:

  • 1 12 ounce sirloin steak
  • 1 1/2 cups water
  • 1 cup red wine vinegar
  • 4 medium jalapenos
  • 3 cloves garlic, peeled
  • 2 teaspoons salt
  • 1 teaspoon oregano
  • 1 teaspoon cumin
  • 1 teaspoon ground red chili
  • 1/2 teaspoon pepper

Preparation:

Place jalapenos and garlic in a blender. Grind to a pulp. Add remaining ingredients, except steak and continue blending. Cut steak into 1 inch cuts and place in large bowl. Pour blended mixture over meat and cover. Let marinate for 2 hours. Preheat grill. Thread meat onto skewers and grill, basting occasionally with remaining mixture. Grill until desired doneness and serve with tortillas.
