This skirt steak recipe not only calls for soy and ginger, but also uses rice wine vinegar and lime juice which tenderize and flavor the meat. The marinating time for this recipe is relatively short making it ideal for weekday meals.

Yield: Serves 4 to 6
Ingredients:
- 2 skirt steaks, roughly a pound each
- for marinade:
- 1/3 cup soy sauce
- juice of 1 lime
- 2 green onions, finely chopped
- 2 tablespoons brown sugar
- 2 tablespoons rice wine vinegar
- 2 tablespoons ginger, minced
- 3 cloves garlic, minced
- 1 teaspoon pepper flakes (adjust to taste)
- 1/4 teaspoon black pepper
Preparation:
Combine marinade ingredients in bowl. Mix well. Place steaks in a resealable bag. Pour marinade over top and refrigerate for 30 minutes to 2 hours. Preheat grill, remove meat from refrigerator and discard marinade. Grill steaks over high heat for about 4 to 6 minutes depending on thickness. Turn once during grilling. Remove steaks from grill when and allow to rest for 5 minutes. Carve across the grain, 1/4 inch thick and serve.
