The secret to the filling is getting it into an even line down the middle of the masa dough. When the tamale is rolled the masa should completely cover the filling, but not overlap too much. Try different amounts of the filling on the first one so you get a good idea of how much filling you need in each tamale. Once you have that amount figured out you can simply measure it for the remaining tamales.
