You can fill you tamales with pretty much anything you have on hand. However, you should remember that that tamales won't have a lot of flavor if the filling is bland. When you make pulled pork tamales you can use leftover pulled pork just the way it is. It already has loads of flavor. Or you can try:

4 cups pulled pork
1 medium onion, chopped
2/3 cup stock
3 cloves garlic, minced
2 tablespoons tomato paste
2 teaspoons cumin powder
1 teaspoon salt
1 teaspoon chili powder
1 teaspoon oregano
1/2 teaspoon fennel
