Once you have the dough together you are ready to add in the lard or shortening. It is up to you which you want to use. The lard will give you a more authentic tamale while shortening will make it a little more healthy.

Combine 2/3 cup of whipped shortening or lard to the masa dough and mix until even. This is your tamale dough.
