Once the dough is together, it's time to add in the lard or shortening. The choice of either is up to you. The lard produces a more authentic tamale, while shortening will slightly decrease the fat content.

Combine 2/3 cup of whipped shortening or lard into the masa dough and mix thoroughly. This is your tamale dough.
