The Bottom Line

This is a low cost, offset smoker that has a number of good features. Built with the traditional smoker design, this unit can give you lots of great barbecue with real smoke from a real fire. While temperature control can be challenging with this smoker (and similar offsets) the authentic flavor and large capacity make up for the limitations. This unit is frequently sold without the firebox. Without the offset firebox you have a charcoal grill, not a smoker.

Guide Review - Char-Griller Smokin' Pro

The Char-Griller Pro is a good offset smoker for a great price (typically around $220 with the "optional" firebox). The construction is good and while temperature control can be a little difficult, practice will get you smoking loads of meat from this large capacity smoker.

With firebox attached this unit gives you a lot of great features including an adjustable coal grate and pull out ash tray for easy clean up. Remember that the fire box, necessary for good smoking, is an optional item in many stores. Search around and you should be able to find the whole unit on sale.

The Char-Griller Pro is a great charcoal grill as well. The large capacity and adjustable coal grate will give you the ability to grill up lots of food quickly with great flavor.

This unit (and similar Char-Griller products) are found in a variety of stores. If you want a good smoker but don't want to spend a lot track one of these units down.

A real smoker at an excellent price, Member Mike55B

I wanted a side-mounted firebox smoker for a long time to replace my little Brinkman but I didn't want to spend a lot of money. Based on reviews on this website, I bought this smoker. After using it many times, I've managed to get the smoking process to a point where I get consistent excellent results. I use lump charcoal exclusively for fuel. I can get about a 4 hour long burn on a single charge of charcoal by filling the firebox up to about the vent level or so, getting a chimney starter full going good, then dumping it onto the charcoal in the firebox. I keep the firebox and chimney vents open until the smoker temp gets up to about 220 then I close the box vent to about 1/8 to 1/4 open and adjust the chimney vent to maintain the cooking temp between 200-210, more closed to raise the temp, more open to lower it. I check the temp every 20 minutes or so and adjust both vents as required. I use rather large chunks of wood for smoking and as long as the firebox vent is no more than 1/4 open, the wood smokes and doesn't burn. I don't soak the wood because when I tried that it generated a lot of soot. If I want to go longer than 4 hours, when I can't get the temp above 200 I just dump more charcoal in the box, crank the vents open, and repeat. A lot of times I'll just wrap the meat in foil and throw it in a 210 degree oven to finish it off because I don't want to smoke anything more than 3-4 hours anyway. I've found that the whole smoking process works best if you have at least one cold six-pack of good beer to keep you hydrated.
