Potato Salad with Dill and Horseradish

The combination of horseradish, plain yogurt, and dill really gives this potato salad a zing. If you want more zing, add a little more horseradish.

Prep Time: 25 minutes

Cook Time: 20 minutes

Ingredients:

  • 1 pound small potatoes
  • 1/4 cup red onion, chopped
  • 3 tablespoons mayonnaise
  • 2 tablespoons plain yogurt
  • 2 cloves garlic minced
  • 2 tablespoons fresh dill, finely chopped
  • 1 tablespoon Dijon mustard
  • 1 teaspoon prepared horseradish
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper

Preparation:

Boil potatoes with salt until cooked through, about 15-18 minutes. Allow potatoes to cook slightly before cutting into 1 inch cubes. In another bowl, combine remaining ingredients. Add potatoes and mix well. Make sure not to over mix or else potatoes will become mushy.
