This delicious stuffed tomato recipe can be used as a side dish or it can stand alone as an entree.

Ingredients:
- 2 cups cooked chicken, chopped
- 6-8 tomatoes
- 8 slices Havarti cheese
- 1/3 cup pesto
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Preparation:
Preheat grill for medium heat. Cut tops off tomatoes and scoop out flesh and seeds. Set aside. In a medium bowl, combine chicken, pesto, salt, and pepper until well coated. Fill tomatoes with chicken mixture. Place on the grill and cook for 20-25 minutes. Toward the last five minutes of cooking, place Havarti slices on each tomato and allow to melt. Once the cheese has melted, remove from heat and serve.
