Old Bay seasoning is a traditional favorite of Maryland and sold world wide. This approximation of that old recipe is a perfect seasoning for fish and seafood.

Ingredients:
- 2 tablespoons ground bay leaves
- 2 tablespoons celery salt
- 1 tablespoon dry mustard
- 2 teaspoons ground ginger
- 2 teaspoons ground black pepper
- 2 teaspoons sweet paprika
- 1 teaspoon ground nutmeg
- 1 teaspoon ground allspice
- 1 teaspoon ground white pepper
- 1 teaspoon ground cloves
- 1/2 teaspoon ground mace
- 1/2 teaspoon ground cardamom
- 1/2 teaspoon crushed red pepper flakes
Preparation:
Combine all ingredients. It is best to grind the herbs and spices together in a spice grinder or mortar and pestle. Store in an airtight container in a cool, dark place.
