Spicy Orange Grilled Shrimp

These shrimp are marinated in flavorful spiced orange marinade. The secret is to let them spend enough time in the marinade to pick up the heat from the Jalapeno Peppers.

Prep Time: 20 minutes

Cook Time: 10 minutes

Total Time: 30 minutes

Yield: Serves 4 to 6

  • 2 pounds shrimp jumbo, shelled and de-veined
  • 1 cup lime juice fresh
  • 4 Jalapeno peppers, seeded and minced
  • 2 tablespoon Tabasco
  • 1/3 cup balsamic vinegar
  • 2 tablespoon black pepper, fresh ground
  • 1/2 cup orange marmalade
  • 1/2 cup peanut oil or corn oil
  • 4 cloves garlic, minced
  • 2 teaspoons salt
  • 4 tablespoons fresh cilantro, chopped

Mix oil, vinegar, and lime juice together in a sauce pan and heat on a medium setting. Add marmalade, Tabasco sauce, salt, and black pepper then mix well. Add Jalapeno peppers, cilantro, garlic. Remove from heat and allow to cool. Place shrimp in a large zip-top bag. Pour marinade over top. Seal and refrigerate for 20 to 30 minutes. Preheat grill. Remove shrimp from marinade and place on hot grill. Grill about 5 to 10 minutes, turning occasionally until done. Cooked shrimp will not have any gray color and will be firm to the touch.
