This recipe is loosely adapted from the "Olive Garden's" Pasta Primavera with Shrimp Recipe.
Prep Time: 30 minutes
Cook Time: 15 minutes
Ingredients:
- 1 pound shrimp, peeled and deveined
- 1 pound linguine, cooked
- SAUCE:
- 3 cups canned tomatoes
- 2 tablespoons butter or margarine
- 2 tablespoons dry marinara sauce mix
- 2 tablespoons lemon juice
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried basil
- 1/4 teaspoon chili pepper, crushed
- 1/4 teaspoon dried marjoram
- VEGETABLES:
- 2 tablespoons butter
- 1/2 pound mushrooms, halved
- 1 green bell pepper, halved and cleaned
- 1 red bell pepper, halved and cleaned
- 1 small yellow onion, halved
Preparation:
For Sauce: Melt butter in 3 quart pan over medium heat. Add remaining sauce ingredients. Stir well and simmer for 10 minutes.
Melt 2 tablespoons of butter and brush over vegetables. Grill until tender but crisp. Add to the sauce and simmer. Grill Shrimp until pink all the way around. Stir shrimp into sauce and continue simmering for about 5 minutes. Spoon over linguine and sprinkle with Parmesan cheese.
