Shrimp on Sugar Cane Skewers

Using a skewer that adds flavor is a great tip for grilling any kind of kebabs. By using sugar cane spears to thread these shrimp you can sweeten them just a bit, giving you delicious seafood kebabs. You can typically find sugar cane in Asian or Caribbean markets.

Prep Time: 15 minutes

Cook Time: 10 minutes

Ingredients:

  • 1/2 cup sugar
  • 1/2 cup water
  • 1/2 cup olive oil
  • 1 teaspoon cayenne
  • 2 tablespoons lemon juice
  • 1 teaspoon minced garlic
  • 1 tablespoons dill
  • 1 1/2 teaspoons tarragon
  • 1/2 teaspoons basil
  • salt and pepper to taste
  • 12 large shrimp, shelled and cleaned
  • 4 sugar cane spears
  • 1/4 balsamic vinegar

Preparation:

Boil sugar and water in a saucepan. Remove from heat. Add everything but shrimp and vinegar. Mix. Marinate shrimp for 1-2 hours. Place 3 shrimp on each skewer. Reserve marinade for later. Place on grill until shrimp is done (no gray left). Add vinegar to marinade and mix. Serve over shrimp.
