Tandoori Shrimp

These jumbo shrimp get a quick marinade in a traditional Indian mixture of spices and yogurt. Yes, yogurt, The yogurt holds the seasonings in place and cooks down to a thin crust as the shrimp grill. This is a quick and easy recipe for a great meal.

Prep Time: 15 minutes

Cook Time: 10 minutes

Marinating Time: 10 minutes

Total Time: 35 minutes

Yield: Serves 4 to 6

Ingredients:

  • 24 large shrimp
  • 1/2 cup plain yogurt
  • 1/3 cup cilantro, finely chopped
  • 2 tablespoons fresh mint, finely chopped
  • 1 tablespoon fresh ginger, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon turmeric
  • 1 teaspoon coriander
  • 1 teaspoon garam masala
  • salt to taste
  • lemon wedges

Preparation:

Shell and devein shrimp. Rinse and set aside on paper towels to dry. Combine the other ingredients. Mix well. Add shrimp to mixture and set aside for about 10 minutes. Preheat grill. Thread shrimp onto skewers. Place shrimp on hot grill and immediately brush with marinade. Grill for about 2 to 3 minutes per side or until done. Shrimp is done when the color has completely and evenly changed.
