Definition: A mop is a thin liquid mixture made with spices or herbs to add moisture and flavor to foods while they cook. Basically a basting solution a mop gets its name from the mop like tool used by barbecue pit masters to apply the solution. Typically a mop is made with water and some type of vinegar with spices and herbs added to provide extra flavor during the cooking process. Ideally a mop should have the same salt content and a slightly higher PH as the food being mopped to facilitate absorption.
