Chuck Ozburn sent me this fantastic, classic-style Carolina barbecue rub recipe. Try this rub next time you want to make a traditional Carolina Pulled Pork.

Prep Time: 10 minutes

Total Time: 10 minutes

Yield: Makes about 1 cup

Ingredients:

  • 2 tablespoons salt
  • 2 tablespoons sugar
  • 2 tablespoons brown sugar
  • 2 tablespoons ground cumin
  • 2 tablespoons chili powder
  • 2 tablespoons freshly ground black pepper
  • 1 tablespoon cayenne pepper
  • 1/4 cup paprika

Preparation:

Combine all ingredients in a small bowl and mix well; use as a dry rub on beef, chicken, lamb or pork.

I tried this rub recipe a couple of weeks ago for a pork rib roast. I followed the recipe except for the cayenne pepper (I didn't have any) so I substituted a few drops of Louisiana hot sauce. After rubbing the mix on to the roast, I let it marinade overnight in the fridge. After marinating, I slow roasted it outside on my grill. After igniting the coals using a chimney starter, I arranged the coals in a single file around the perimeter of the grill, & placed the roast in the center. I turned the roast over every 30 minutes. In 3 hours, it was so tender that when I tried to remove the roast with a fork, all I did was make some of the meat flake off! I got compliments not only from my family, but also the neighbors who were downwind from me. I was a good neighbor & gave them a few slices & they told me it tasted even better than it smelled! I made another batch and am trying it on some country style pork ribs! The photo is what was left of a 2 lb. roast after my family of 3 + 3 slices for the neighbors.
