Spicy Southwestern Rub

This wet rub packs a lot of flavor. You can adjust the heat by using either hot, medium or mild chili powder.

Prep Time: 15 minutes

Total Time: 15 minutes

Yield: Makes about 1/3 cup

Ingredients:

  • 2 tablespoons chili powder
  • 2 tablespoons vegetable oil
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons ground cumin
  • 2 large garlic cloves, minced
  • 2 teaspoons coarse salt
  • 2 teaspoons sugar
  • 1 1/2 teaspoons freshly ground black pepper
  • 1/2 teaspoon allspice

Preparation:

Mash garlic and salt together to form a paste. Mix together chili powder, cumin, garlic paste, Worcestershire sauce, sugar, pepper, allspice, and oil. Let this rub sit on meat for 30 minutes to 2 hours.

I was very, VERY pleased with this rub. I added an extra clove of garlic, well, okay, I added two extra and a pinch more of salt and kind of added a little of everything else to keep it even. I ended up with about with about 1.3 times the original. It coated 5 pounds of assorted pork chops (a family pack). I let it sit for about 70 minutes. Very Good! I will definitely be making this again. As much as I like to get my hands dirty, I found that using the back of a spoon worked best for application of this amazing rub. It was a little too spicy for my 2 and 4 year olds, but my kids over 8 loved it (and so did I).
