Carolina Ribs with Red Pepper Sauce

These ribs are coated with a Carolina style rub and basted with a tangy red pepper sauce.

Prep Time: 20 minutes

Cook Time: 4 hours, 00 minutes

Ingredients:

  • 3 pounds pork spareribs
  • For Rub:
  • 2 tablespoons salt
  • 2 tablespoons sugar
  • 2 tablespoons brown sugar
  • 2 tablespoons ground cumin
  • 2 tablespoons chili powder
  • 1 tablespoon freshly ground black pepper
  • 1 tablespoon cayenne pepper
  • 1/4 cup paprika
  • For Red Pepper Sauce:
  • 1 can tomato sauce
  • 3/4 cup water
  • 3/4 cup sugar
  • 8 oz Tabasco or similar sauce
  • 1/2 tablespoon red pepper flakes
  • 1/2 tablespoon cayenne
  • 3 tablespoon lemon juice

Preparation:

Prepare ribs by removing the membrane from the underside of the ribs. Trim off any loose fat or meat. Prepare smoker or grill. You will want to hold a temperature around 200 degrees F. for 4 hours, so plan accordingly. Season ribs with Carolina rub and place on grill or in a smoker. While ribs are cooking, prepare barbecue sauce. Mix all ingredients in a sauce pan and simmer on low for 10 minutes. Remove from heat and set aside. When sauce cools, reserve half the sauce for serving.

Cook ribs until the internal temperature of the meat reaches about 145 degrees F. Brush with barbecue sauce. After about 10 minutes turn the ribs over and brush with sauce continually during cooking process. Serve with reserved half of red pepper sauce.
