Most people serious about barbecue inject flavor directly into the meat before it hits the smoker. This injection marinade not only puts flavor inside the meat but it adds moisture that will help keep the meat tender during the cooking process. What you want to use is water with a little oil and some of your spice rub. The water helps get the marinade into the meat and the oil adds the moisture you need. By matching the spice rub used on the outside with the injection marinade you keep the same flavors throughout the process.
