Grilled Jerked Prime Rib

If you like jerked seasoned dishes, here is a prime rib recipe sure to please. This recipe calls for a jalapeño and cayenne pepper. Remember that once seeded, jalapeño loses much of its heat. You can add more or less cayenne pepper depending on how spicy you like it.

INGREDIENTS:

  • 1 6-8 pound standing rib roast
  • 1 small onion, chopped finely
  • 1 jalapeño pepper, seeded and finely dice
  • 2 tablespoons soy sauce
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon cinammon
  • 1 tablespoon ground cumin
  • 1 tablespoon allspice
  • 2 teaspoons salt
  • 1 teaspoon cayenne pepper

PREPARATION:

Mix together all ingredients besides roast, in a small bowl. Slather mixture onto rib roast. Allow roast to sit in room temperature with seasonings on for at least 20 minutes. Preheat grill for medium-high heat. Place rib roast on grill rack and allow to cook for 2 hours or until internal temperatures reach between 135-145 degrees. Let roast rest for 15 minutes before carving.
