Grilled Herb Butter Prime Rib

By Derrick Riches, About.com

A simple yet delicious way to prepare prime rib for any occasion. Remember that you have to grill this rib roast on indirect heat.

Prep Time: 20 minutes

Cook Time: 1 hour, 30 minutes

Ingredients:

  • For roast:
  • 1 standing rib roast, about 5-6 pounds
  • 1 cup dry red wine
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • For herb butter:
  • 1/2 cup softened butter, unsalted
  • 2 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/4 teaspoon salt
  • 1/4 teaspoon white pepper

Preparation:

Allow roast to sit in room temperature for at least one hour. Preheat grill for high heat. Trim off excess fat, but make sure not to take off all of it. Coat with garlic powder, salt, pepper, and paprika. Place roast on direct heat and allow to sear for 2-3 minutes. Turn and sear each side of the roast accordingly. Place roast on indirect cooking surface of the grill. Brush with wine, cover grill, and allow to cook for 1 1/2 hours, or until internal temperature reaches 135-145 degrees F. Baste with wine every 15 minutes during cooking process. Once cooked, remove roast and allow to rest for 10-15 minutes before carving. Prepare herb butter mixture by combining all ingredients in a small mixing bowl. Slice meat and top with 1 of butter mixture.
