Southwestern Pork Chops

By Derrick Riches, About.com

You can adjust the heat for this pork chop rub by using hot of mild chili powder, or by using more cayenne if you like it spicy. Grill these chops hot and fast. If you are using thin chops cut the cooking time in half.

Prep Time: 10 minutes

Cook Time: 10 minutes

Ingredients:

  • 8 pork loin or rib chops, 1/2 inch thick
  • 1 tablespoon chili powder
  • 1 clove garlic, minced
  • 1 teaspoon ground cumin
  • 1/4 teaspoon cayenne
  • 1/4 teaspoon salt

Preparation:

Combine everything but the chops in a bowl and mix well. Trim chops of excess fat and rub seasonings over both sides. Cover and refrigerate for 1 hour. Preheat grill. Place chops on grill over medium high heat and cook for about 10 to 12 minutes, turning occasionally. Remove then done. Chops should be slightly pink in the middle.
