It isn't just chicken that goes well in salads. This pork tenderloin is grilled to perfection, sliced, and placed in a fresh salad.

Ingredients:
- 1 pound pork tenderloin
- 2 cups pineapple, cubed
- 1 cantaloupe, cut into small cubes
- 5 tablespoons mayonnaise
- 5 tablespoons unsweetened pineapple juice
- 1/2 purple onion, sliced and separated into rings
- 1/4 cup sliced and toasted almonds
- 4 tablespoons honey
- 2 tablespoons Dijon mustard
- 1/2 teaspoon ground ginger
- leaf lettuce
- curly endive
Preparation:
Preheat grill. Combine 1/4 teaspoon ginger, 2 tablespoons honey and 1 tablespoon mustard. Mix and brush over the tenderloin. Place tenderloin on grill and cook about 20 minutes, turning once, or until the internal temperature reaches 160 degrees F. Remove from grill and cut into thin slices. Combine mayonnaise, pineapple juice with remaining ginger, honey and mustard in a blender and process until smooth. In a large bowl toss pork slices, lettuce, endive, pineapple, onion and cantaloupe. Top with almonds and serve with dressing.
