marinade because it's slight acidic nature helps to tenderize meat while the thickness holds herbs and spices in place.

Ingredients:
- 2 pounds pork tenderloin
- 2 cups plain yogurt
- 2 tablespoons lemon juice
- 4 cloves garlic, minced
- 1/2 teaspoon ground cumin
- 1/4 teaspoon ground coriander
- 8 small white onions
- 8 cherry tomatoes
- 1 red bell pepper
- 1 green bell pepper
Preparation:
Cut tenderloin into 1 inch squares. In a bowl combine the yogurt, lemon juice, garlic, cumin and coriander. Mix well. Add pork, cover and refrigerate for about 6 hours. Cut bell peppers into 1 inch squares. Alternate pork, onions, tomatoes and peppers onto skewers. Preheat grill. Grill over a medium fire for about 30-35 minutes or until pork is cooked through.
