Oriental Pork Tenderloin

This Asian style pork tenderloin is a complete meal. Serve it up with vegetables over rice and you'll have a delicious low fat dish.

Prep Time: 20 minutes

Cook Time: 15 minutes

Ingredients:

  • 1 pound pork tenderloin
  • 2 cups broccoli
  • 2 cups carrots, thinly sliced
  • 1 red bell pepper, cleaned and cut into thin strips
  • 1 8 ounce can of sliced water chestnuts, drained
  • 2 green onions, sliced
  • 2 cloves garlic minced
  • 4 tablespoons soy sauce
  • 3 teaspoons sesame oil
  • 1 teaspoon fresh ginger
  • aluminum foil
  • hot, cooked rice

Preparation:

Remove most of the stems from the broccoli leaving mostly the flowering part. Preheat grill. Divide all ingredients by 4. Cut four large pieces of aluminum foil. Place tenderloin on hot grill and sear the outside making good grill marks. Grill about 10 minutes. Slice tenderloin into 1/4 inch slices and divide into 4 equal amounts. Place one-fourth of the pork, broccoli, water chestnuts, red pepper and onions in the center of one piece of foil. Season with soy sauce, sesame oil and ginger. Fold and seal foil. Repeat until all four packets are made. Place on hot grill for 10-12 minutes. Serve over rice.
