Normandy Style Pork Loin

This marinated roasted pork loin is grilled indirectly so it slow roasts to perfection. Make sure you keep the temperature low enough to prevent the surface from burning.

Prep Time: 20 minutes

Cook Time: 2 hours

Ingredients:

  • 1 3 to 5 pound, rolled pork loin roast
  • 6 ounces of apple juice concentrate
  • 1/2 cup onion, minced
  • 1/2 cup dry white wine
  • 3 tablespoons vegetable oil
  • 2 tablespoons soy sauce
  • 1 clove garlic, minced
  • 1/2 teaspoon rosemary
  • 1/2 teaspoon black pepper

Preparation:

Combine everything but the roast in a large nonreactive bowl. Mix well. Add roast, cover and refrigerate for at least 2 hours. Preheat grill and prepare for indirect grilling. Place the roast on the non-burning area of the grill and close the lid. Depending on the size grill for 1 1/2 to 2 hours. The roast is done when the internal temperature reaches 160 degrees F. (72 degrees C.). Remove from grill and let it rest for about 10 minutes. Remove strings and slice thinly.
