These
pork chops are served up in a rich flavorful sauce. The great thing about this recipe is that you don't need the best chops to get a good meal.

Ingredients:
- 4 pork chops
- 4 cups hot cooked pasta
- 1 1/4 cup water
- 3/4 cup reduced-sodium chicken broth
- 1/4 cup evaporated milk
- 3 tablespoons tomato paste
- 2 tablespoons white wine
- 2 tablespoons sun dried tomato bits
- 2 tablespoons cornstarch
- 2 clove garlic, minced
- 1 1/2 teaspoons dried basil leaves
- 1 teaspoon olive oil
- 1 teaspoon sugar
- 1/4 teaspoon freshly ground black pepper
Preparation:
Butterfly pork chops by cutting lengthwise through the middle to the bone. Spread the side open until chop resembles a butterfly. Preheat and oil grill. Place chops on grill. Cook, covered, until done. About 12-15 minutes. Turn once during grilling. In 10 inch nonstick skillet, heat oil over medium-high heat; sauté garlic. Combine broth and wine. Add 1 cup water, milk, tomato paste, tomato bits, basil, sugar and pepper. Cook over medium heat, until sauce comes to a boil, stirring constantly. Combine remaining 1/4 cup water and cornstarch; added to sauce. Cook over medium heat until sauce is thickened, stirring constantly. Serve over pasta topped with sauce.
