The combination of sweet and spicy flavors gives this grilled pork roast a unique, yet fantastic flavor.

Yield: Serves 6 to 8
Ingredients:
- 1 pork shoulder, boneless and about 3 pounds
- 1 cup enchilada sauce, canned is fine
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- 1 tablespoon dried parsley
- 1 tablespoon Worcestershire sauce
- 1 teaspoon hot sauce
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Preparation:
Preheat grill for medium-high heat. Combine, salt, pepper, parsley, chili powder, and garlic in a small bowl. Rub mixture onto roast and place on grill. Cook for 25 minutes. While roast is cooking, combine remaining ingredients to create a sauce. Baste roast with sauce every 15 minutes until roast is completely cooked. Roast should be done when internal temperature reaches between 160-165 degrees F. Remove roast from grill and allow to sit for a few minutes before carving.
