Orange-Pecan Stuffed Pork Chops

This delicious corn bread stuffed pork chop recipe has the combination of citrus and pecan flavors.

Prep Time: 15 minutes

Cook Time: 40 minutes

Ingredients:

  • 4 loin chops, about 1 1/2 inch thick
  • 1 cup orange juice
  • 3/4 cup corn bread stuffing
  • 1/4 cup onion, chopped
  • 2 tablespoons pecans, chopped
  • 2 tablespoons soy sauce
  • 2 cloves garlic, minced
  • 1 tablespoon butter or margarine
  • 1 teaspoon orange zest

Preparation:

To prepare chops: Trim fat and make individual pockets in each chop. Place in a shallow dish.

To prepare marinade: Combine 3/4 cup orange juice, soy sauce, garlic, and orange peel. Pour mixture over chops, cover, and allow to marinate in refrigerator for 6-8 hours.

To prepare stuffing: Place onion, butter, 1/4 cup of orange juice in saucepan. Bring mixture to a boil. Remove from heat and add corn bread stuffing, pecans, and onions. Remove chops from marinade and place stuffing into pockets. Make sure to reserve marinade for basting.

Preheat grill. Place chops on grill and allow to cook over indirect medium heat for 40 minutes. Brush with marinade often. Remove from heat and serve immediately.
