Ingredients:
- 1 pork tenderloin ( 2 pounds)
- 1/2 cup dry sherry
- 1/4 cup honey
- 1/4 cup fresh ginger, julienned
- zest from 1 lemon
- 1 tablespoon whole mustard seed
- 1 teaspoon fresh parsley, chopped
- 1 teaspoon fresh dill, chopped
- 1 teaspoon fresh basil, chopped
Preparation:
Combine sherry, ginger, honey, lemon zest, parsley, dill and basil over low heat in a small saucepan. Just before serving, add in mustard seed to sauce.Preheat grill. Grill whole pork tenderloin over medium heat, for about 30 minutes, basting with a small amount sauce. Remove tenderloin from grill, slice into 1" medallions. Serve immediately topped with the warm herb-sherry sauce.
