Grilled Pork Loin Chops with Blackberry Butter

The blackberry butter is a wonderful addition to this grilled pork chop dish. It adds a flavorful component to a fresh off the grill chop. Serve with grilled vegetables or an aromatic herb risotto.

Prep Time: 20 minutes

Cook Time: 14 minutes

Total Time: 34 minutes

Yield: 4 servings

  • 4 pork loin chops
  • For rub:
  • 2 teaspoons chili powder
  • 2 teaspoons paprika
  • 2 teaspoons mustard powder
  • 2 teaspoons dried parsley
  • 2 teaspoons sea salt
  • 1 teaspoon marjoram
  • 1/2 teaspoon coarse ground black pepper
  • For blackberry butter:
  • 1/2 cup unsalted butter, brought to room temperature
  • 6 blackberries, chopped
  • 1 tablespoon honey
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon sea salt

To prepare compound butter, mix together unsalted butter and honey until well incorporated.  Add salt and chili powder and combine.  Finally, add chopped berries, making sure to fold in carefully.  Spoon butter mixture onto a 12 inch piece of plastic wrap.  While rolling, form into a cylindrical shape.  Twist ends and secure tightly.  Place into freezer for 30 minutes or into refrigerator for 2 hours before using.
Preheat grill for medium-high heat.  Apply seasonings to both sides of pork chops.  Place onto grill and cook for 5-7 minutes per side, depending on thickness of cut.  Once cooked through, remove from heat.  To serve, cut a 1/2 inch slice of blackberry butter and place onto center of plated pork chop.
