Game Hens are a great way to put together a fancy meal and are as easy to grill as chicken. You can grill these straight on the grate or you can string them on a rotisserie.

Ingredients:
- 4 Cornish game hens (about 1 1/2 pounds each)
- 1/2 cup soy sauce
- 1/2 cup sherry
- 1/2 cup green onions, minced
- 3 tablespoons sesame oil
- 3 tablespoons brown sugar
- 3 cloves garlic, minced
- 2 tablespoons fresh ginger, grated
- 1/4 teaspoon cayenne
Preparation:
Wash and pat dry the game hens inside and out. Combine all other ingredients in a glass or plastic container. Place hens in marinade, turning to coat evenly. Cover and refrigerate for a couple of hours (overnight is also good). Preheat grill. Remove hens from marinade and pour marinade into a saucepan. Bring to a boil for one minute. Remove from heat and allow to cool. Place game hens on grill and cook with indirect heat. Cook for about 1 hour, turning every 15 minutes and basting with marinade. Remove when done and serve immediately.
